With the recent spike in food costs, triggered by the high cost of fuel, as well as other factors like the floods in the Midwest that have wiped out a vast quantity of corn, soy beans and other crops--I'm sure I'm not the only one searching for nutritional alternatives to high-priced meat and poultry. Sure, we know that eggs offer a good substitute because they are high in protein, and that's good for one main dish a week. But then what?
