Inever thought I would bake my own bread.

After my first passing attempt at homemade whole wheat bread years ago, I got reviews like, “Wow, that’s dense.”  I happily submitted to the fact that bread-making wasn’t for me. I knew where all the bread outlets in my city were, so I had a frugal option for whole grain bread anyway. Why bother with all that work?

I am shaking my head in disbelief as I write this: I haven’t bought bread in months.

EASY Baked Potato Soup

Baked Potato Soup

Ingredients

  • 1/4 cup (1/2 stick) butter
  • 1/4 cup chopped onion
  • 1/4 cup all-purpose flour
  • 1 can chicken broth
  • 1 can (12 fl. oz.) Evaporated Milk
  • 2 large or 3 medium baking potatoes, baked or microwaved

Directions
  1. Melt butter in large saucepan over medium heat.
  2. Add onion; cook, stirring occasionally for 1 to 2 minutes or until tender.
  3. Stir in flour.
  4. Gradually stir in broth and evaporated milk.
  5. Scoop potato pulp from 1 potato (reserve potato skin); mash.
  6. Add pulp to broth mixture.
  7. Cook over medium heat stirring occasionally until mixture comes just to a boil.
  8. Dice remaining potato skin and potatoes; add to soup.
  9. Heat through.

This is great topped with all those baked potato toppers you like

Crockpot Enchilada Casserole

Ingredients

  • 15 ounce can tomato sauce
  • 1/2 cup water
  • 2 teaspoon Tabasco sauce
  • 5 flour tortillas (taco size)
  • 1 cup grated cheese (cheddar or Monterey Jack)
  • 1/2 onion, diced
  • 1 pound lean ground beef

Directions
  1. Mix the tomato sauce, water, and Tabasco sauce in a bowl.
  2. Pour half of the sauce mixture into a slow cooker.
  3. Layer a tortilla, 1/4 of the cheese, then 1/4 of the onions and meat in the cooker.
  4. Continue adding the layers until all of the cheese, onions, and meat are used.
  5. Top with a tortilla.
  6. Cover the tortilla with the other half of the tomato sauce mixture.
  7. Cover and cook on low for 4 hours.

Week Two Check-In: Genesis, Exodus, and a blessing

What a whirlwind week it has been! I came into the challenge a few days late, decided to blog about it a few days later, so I don't have LOTS of posts, but here are my observations:




A beautiful "fringe benefit" of this week has been that my 10 y/o daughter saw me reading, asked what I was doing, and asked if she could join me on the journey. . .God is so good!

Day 7

I am taking notes as I read through each day, and this is what I jotted down today.
  • Be careful who you associate with. Ex. 34:12 "Take heed to thyself, lest thou make a covenant with the inhabitants of the land whither thou goest, let is be for a *snare in the midst of thee (*to lead you into evil)
  • When you've been with the Lord, it shows on your face! Ex. 35:29-35 "Moses wist not that the skin of his face shone.
  • Willing hearted giving = liberal giving. (35:22 & 29)
  • They were so excited about giving to the work that Moses had to make an announcement to STOP! 36:7 says "For the stuff they had was sufficient for all the work to make it, and too much." How different would our churches be if that were the case today.
  • Finish what you start, regardless of how hard it is or how long it takes. (Ex. 40:33) "So Moses finished the work."
I dive into Leviticus tomorrow. . .

Day 6

Today I saw that Moses was a stressed leader!

When his father-in-law Jethro arrived, bringing his wife and kids to him (Moses had sent them to stay with him before the Exodus from Egypt), he noticed that Moses was a bit edgy and asked what was wrong.

"The people come to me to enquire of God" was his answer. He was trying to do everything by himself. He was bearing the burdens of the entire nation alone.

Jethro, using wisdom from ABOVE replied, "The thing that thou doest is not good. Thou wilt surely wear away. . . for this thing is too heavy for thee; thou art not able to perform it thyself alone." He proceeded to give him counsel that he needed to choose good men and train them to be leaders. That way, Moses wouldn't get burned out.

(Micromanagement is not the way to go. Delegate, delegate, delegate!)

"So Moses hearkened to the voice of his father in law, and did all that he said."

I have taken on a challenge. While reading over at Mom's Toolbox, I read about a group of folks who were challenged to read through the Bible, cover to cover, in 90 days. At first, I have to say that I dismissed it as insane. . .adding one more thing to the to-do list for each day. And then I began to read about the blessings that readers had experienced, seeing the entire canon of Scripture in such a short amount of time. I will admit I was intrigued.

I explored the original site, Biblein90days.org, only to discover the same type of testimonials.

  • "It seemed to bring everything together in a way as never before in my reading and in my study.”
  • "I was so blown away by the experience"
  • "I am moved at a level I can't even put into words"
  • "I am now on my third time through the Bible in 90 days and it gets better every time!"

So here I sit.

I have made the commitment.

I am excited about this.
