Sour Cream-Apple Squares
2 c. all-purpose flour
2 c. brown sugar, packed
1/2 c. butter, softened
1 c. chopped nuts
1 to 2 t. cinnamon
1 t. baking soda
1/2 t. salt
1 c. sour cream
2 t. vanilla extract
1 egg
2 c. apples, cored, peeled and chopped
Combine flour, sugar and butter in a large mixing bowl; blend with an electric mixer on low speed until crumbly. Stir in nuts; press 2-3/4 cups of mixture into an ungreased 13"x9" baking pan. Add cinnamon, baking soda, salt, sour cream, vanilla and egg to remaining flour mixture; fold in apples. Spread evenly over pressed mixture; bake at 350 degrees for 25 to 35 minutes. Makes 15 to 18 servings.

HG's Top-of-the-Chops BBQ Chicken Salad
Finally! We're making over California Pizza Kitchen's world-famous BBQ chicken chopped salad, with our own special dressing. YAY!!!
Ingredients:
- 3 oz. cooked boneless skinless lean chicken breast, chopped
- 2 tbsp. BBQ sauce (with about 45 calories per 2-tbsp. serving), divided
- 4 cups chopped romaine lettuce
- 1 plum tomato, chopped
- 1/4 cup peeled and chopped jicama
- 3 tbsp. canned black beans, drained and rinsed
- 3 tbsp. canned sweet corn kernels, drained
- 2 tbsp. chopped scallions
- 1 tbsp. chopped cilantro
- 1 tbsp. chopped basil
- 2 tbsp. shredded fat-free cheddar cheese
- 5 baked tortilla chips, broken into bite-sized pieces
- 2 tbsp. fat-free ranch dressing
Directions:
Place chicken and 1 1/2 tbsp. BBQ sauce in a small bowl and toss to coat. Set aside.
Place lettuce in a large bowl. Top with tomato, jicama, black beans, corn, scallions, cilantro, and basil.
Add the saucy chicken and top with cheese and tortilla chips.
To make the dressing, mix remaining 1/2 tbsp. BBQ sauce with ranch dressing. Serve and enjoy!

Best (and Easiest) Muffins EVER
Mix together:
- 1 box cake mix (yellow, spice, carrot, chocolate)
- 1 can pumpkin (NOT pumpkin pie mix)
Mix well. The batter will be thick. Spoon into muffin pans that have been sprayed with non-stick cooking spray. Mini-muffins bake in about 7 minutes. Regular size muffins take a bit longer.
Tip: The Pampered Chef sells "Sweet Cinnamon Sprinkle" that we sprinkle over the tops of the batter. It gives the muffins a streusel like texture without the calories of traditional streusel.
Yep. That's it! Low fat, moderate calories, high in fiber. And the kids like 'em too (at least the chocolate version!)
The flavor cake mix you choose will determine the flavor of your muffins. Our favorites are carrot and chocolate. There are tons of variations to this recipe; mini chocolate chips, nuts, etc. Just be creative and enjoy!
